Sweet n’ Sour Melon Salad with Zesty Lime Dressing

A very summery sweet n’ sour melon salad with crunchy cucumber, avo, feta and a zesty coriander lime dressing you will savour by the spoon (not even kidding it’s that good). If you can’t find Spanish melons then good ol’ ripe honeydew will be just as lovely.

Ingredients

  • 1 Spanish melon (or honeydew), skin and flesh removed and cut into wedges.
  • 2 cucumbers, peeled and cut into wedges
  • 1 cup baby spinach leaves
  • ½ red onion finely sliced
  • 1 avocado, sliced into wedges
  • ⅓ cup crumbled feta
  • Salt
  • Pepper

Zesty Lime Dressing

  • 20g fresh coriander
  • 20g fresh dill
  • 20g parsley
  • 1 small mild green chilli with it’s seeds
  • 1 clove of garlic, crushed
  • Juice of 2 limes
  • 2 tbsp white wine vinegar
  • 1 tbsp maple syrup
  • 1 tsp Dijion mustard
  • ⅓ cup extra virgin olive oil
  • Pinch of salt

Method

  • 1
    Assemble your melon, cucumbers, spinach, onion, avocado and feta on a serving platter.
  • 2
    Make the dressing - place all ingredients into a food processor and blend until smooth.
  • 3
    Pour the dressing over the salad and top with extra herbs.
