This prawn and smoked tofu laksa is one of my favourite quick comfort meals. It’s full of flavour, comes together fast, and feels like a warm hug in a bowl. I use a store-bought laksa paste for ease, but in this recipe I’ve amped it up with fresh aromatics, lime juice, roasted cashews for extra richness, and my flavour hack: Nutra Organics chicken bone broth. It adds depth and gives a little gut health boost without needing to simmer for hours.
I cook the paste in macadamia oil, which is a neutral oil that’s also rich in healthy fats. You can easily swap it for olive oil if that’s what you have.
Smoked tofu gives this laksa a savoury, smoky flavour that works beautifully with the prawns and broth. If you can’t find smoked, regular firm tofu is just fine.
Once your broth is ready, add in the tofu, prawns and veg, cover for a few minutes, and you’re good to go. Serve over vermicelli noodles and finish with sprouts, herbs, chilli, lime and a splash of fish sauce.
It’s simple, satisfying, and perfect for when you want something nourishing without overthinking it.
