The classic Caesar has stood the test of time and for good reason…there is something just so nostalgic and delicious about tangy mayonnaise against a backdrop of salty, cheesy or smokey bacon crunch – it just works. I’ll always stand by “if ain’t broken, don’t fix it”, however on some occasions my body needs a little more ‘clean’ than comfort.
This is my ‘healthier’/ lower-carb caesar salad with a little umami twist! Baby gem lettuce with crispy broccolini is dressed in a miso caesar dressing, then kissed by grated parm and the most delicious crunchy sesame croutons. A pretty awesome version that is just as good as the OG if you ask me!
